we put the “happy” in happy hour

a few days backmiss elinor, hubby, and i grabbed some early dinner with my folks at st. francis.  it was mighty tasty. there is just something about heading to a restuarant on the earlier side and making the most of the evening.  it usually gives us license to try more dishes and double up…you can’t beat a happy hour deal, am i right?  and in this case, i am talking a big ol’ gourmet burger with a side of hand cut fries for seven bucks.  #winning.

the springtime weather was particularly springy and the restaurant opened up the side of the restaurant so there was a perfect breeze while we dined.  elinor sat in her little seat just playing away while we sipped some good wine and noshed on baked goat cheese with crusty bread, french onion burgers, chicken salad sandwiches, and radish/bacon/garden pea/buttermilk ranch salad.  good stuff.  and so local and fresh.  it was a simply delightful meal with great company.  happiness and satisfied tummies all around.

snaps & snippets & blurbs

welcome, my friends to the burger-palooza version of the s&s&b post.  this week, my hubby and i celebrated my cousin’s birthday, and coincidentally, national cheeseburger day, by heading out to the grind for some burgers.  it was pretty tasty.

and, in a stroke of good luck, we had also scheduled one of our before-the-baby-arrives-just-the-two-of-us date nights as a trip to zinburgeroops.  burgers twice in one week!  you know, most people would have chickened out and rescheduled, but not us!  no sir, we powered through.  plus, if it is in the daytimer, it must be so.

the table is set + the super crispy fries + my man’s side of mac and cheese + my man’s gigantor burger complete with fried ratatouille and peppers and cheese + donuts with butterscotch for dessert + two very happy faces + hurray for az restaurant week! + the cool milk bottle chandelier at zinburger + my man’s plate + my bunless burger with zinfandel onions.  bunless so that i had extra room for… two, yes two baskets of truffle fries and a chocolate shake!  whew.

i heart…burgers

as evidenced by our numerous posts with pictures of burgers [here and here and here and here and here and here and here and here and here and oh yeah, here]…hubby and i likey the burgers.  we make these delicious little discs of beef at home every so often but we usually resort to restaurants to get that perfect patty to cheese to toppings to bun ratio.  you know what i am talking about, people.  there is some kind of magic that burger joints add that i have just never been able to capture.

until now.  never fear, martha stewart is here!  i recently stumbled upon a perfect picture of burger scrumptiousness accompanied by a detailed recipe that only martha could provide. who needs to go out to dinner when you can get the perfect burger in your own kitchen?  my thoughts exactly.  which is why i am planning to cook up these babies in the coming days.  i just hope that they live up to that pile of meaty goodness seen in the picture above.  i will keep you posted.

ingredients:

  • 1 1/4 pounds coarsely ground beef chuck (70 percent lean)
  • coarse salt and freshly ground pepper
  • 4 slices american cheese
  • 4 teaspoons unsalted butter, softened
  • 4 potato sandwich rolls
  • 1 cup shredded iceberg lettuce

optional toppings:

  • 1/4 cup diced white onion
  • 1 dill pickle, thinly sliced
  • 4 teaspoons yellow mustard
  • spread of mayo, ketchup, and relish

directions:

  1. divide beef into 4 mounds, and evenly place on a 12-by-14-inch piece of plastic wrap. place another piece of plastic on top. roll into 5 1/2-inch patties, about 1 inch thick, with a rolling pin.
  2. heat a griddle or 2 large cast-iron skillets over medium-high. season both sides of patties with salt and pepper. cook patties, pressing with a spatula, 3 minutes. reduce heat to medium, flip, and top with cheese. cook 2 minutes.
  3. butter cut sides of rolls, and toast on griddle until edges just start to brown, about 1 minute.
  4. sandwich burgers in rolls with lettuce and toppings.

yields 4 burgers

cook’s notes:

  • toppings – sour, salty pickles, spicy onions, and shards of cool iceberg lettuce are the best counterpoints to this greasy-in-a-good-way patty.
  • make ahead – thin patties freeze beautifully when layered with parchment in a freezer bag. after an hour at room temperature, they’re ready for the griddle.
  • patty – a 70 percent lean meat mix is key for griddle-cooked burgers, which get crisp by sizzling in their own fat. flatten them with a rolling pin for uniform thinness.
  • cheese – this guilty pleasure burger begs for gooey, melty american cheese.
  • bun – martin’s famous sandwich potato rolls are our choice for their slight sweetness and optimally squishy centers. butter them before toasting to highlight those qualities.

banana = half way mark

cravings & such:  meat.  big, yummy burgers.  bun not necessary…we are all about the meat here, folks.  oh yes, and anything asian.  if i could eat teppanyaki or sushi every day, i would be pretty happy.  well, teppanyaki and a burger.

the bump:  getting bigger every day!  well, at least every week.  those little belly tendons are getting a workout. and speaking of workouts…the yoga folding is getting kinda awkward.  i guess i am pregnant and might need to adjust my poses a bit to accommodate a growing bump.

cool & cute things:  baby is swallowing more these days to practice using the digestive system.  which means the first bowel movement is in the works!  we will be seeing that meconium in a diaper very soon!  the baby is about 6.5 inches long, crown to rump and 10 inches from head to heel.  baby weighs in at 10.5 ounces.

new things:  we know the gender!  hurray for our baby girl!  girl, girl, girl!

meaningful moments:  seeing HER again during the ultrasound and taking home some cute pictures of tiny feet and a big belly.  finding out that we are having a little girl and sharing the news with family and friends.  calling her by name.  hearing that she is healthy and VERY active…and feeling that activity more and more.  so much fun.

the countdown:  140 days to go!

this was kind of a weird weekend for us…hubby was in san diego visiting his buds for some pre-wedding boy time so that left me and the buddies for a weekend of chick flicks (sorry charlie man) and naps.  i also got a pedicure!  and enjoyed a dinner date / chat session with my friend hallie.  i was pretty lazy, i must say.  but i thoroughly enjoyed the relaxation.

heading out for dinner with my friend + that’s right…zinburger AGAIN + those amazing truffle fries + a bunless burger…baby just wanted a pile of meat and cheese + adorable miss hallie enjoying her cookies and cream shake.  yum!  and a chocolate shake for me [not pictured] + relaxing after dinner with some teavana iced tea + sitting outdoors, enjoying the scenery and lighted trees + coco all curled up in her favorite fuzzy blanket + intently watching miss congeniality [i was in a sandra bullock movie mood] + charlie taking cover from all the girly activities.  such a good sport and such a sweet cuddly lap buddy

dear peanut

so…this is going to be a big month for us.  you are going to almost double in size.  and i get the feeling that i am too.  i have been feeling you move a lot more these days and it is so much fun.  a couple of nights ago, you really surprised me with some major somersault action.  i really felt it.  it wasn’t a subtle flutter, i was a major movement.  i think you are just showing off your new joint-bending skills.  and your papa and i can’t wait for the real show in a month or so…when we can both see and feel your kicks.

well, this is the big week.  we have an ultrasound appointment and are crossing our fingers that you aren’t crossing your legs.  i can’t believe we will know soon!  everyone is so excited.  i am not sure why, but i have been feeling like you might be a girl.  this is based on nothing scientific or even old wives’ tales.  i just have felt that way recently.  i guess i will know soon!

keep growing and stay healthy!  i hope you like spicy food, cheese, burgers, salads, and chocolate häagen-dazs because i am digging into a lot of that these days.  i’m sure if you aren’t pleased with something that you will let me know.  see you soon, little one.

blowing out the candles…again

monday was my dad’s birthday.  may is a busy month!  mothers day, my parents’ anniversary, my mom’s birthday, and now, my dad’s birthday.  lots to celebrate which is always fun.  in honor of the day, the whole family gathered at zinburger [last seen here] for a meaterrific party complete with fries and shakes.  yum.  after we consumed the deliciousness, we headed back to the ridley house to open cards, sing, blow out the candles, and indulge in some festively sprinkled cupcakes.  it was pretty over-the-top

a sassy face & a gopher face + zinburger…mmmm + the breezy entrance with bovine wall art + the amazing menu + bree and her man + one of three baskets of fries + the birthday boy sipping his bananas foster milkshake + my hubby’s turkey sloppy joe.  he said that it rivaled a real meat burger which is really saying something + my PERFECT samburger + the celebratory table complete with a platter o’ cupcakes + blowing out the candles

what a great weekend.  my week was so busy with my tasks and projects [culminating in a big work event that went really well and that is now officially behind me] that a relaxing weekend with my man was especially needed.  after the dust had settled from the event, i took a deep breath, met up with my hubby, and kicked off our weekend with some yummy food at bourbon steak.  from there, it was more or less just taking naps, watching movies, catching up on my home-duties, and recovering…nothing too snap-worthy, but it was perfect in my book.  here are a few pics from our evening at bourbon steak.

16 weeks

cravings & such:  last week was pretty great because i was able to consume lots of salad and berries, which are currently my favorites.  yum.  and i continue to love all things spicy. plus, i got to eat a burger and fries yesterday so i am a happy girl.  no complaints here!

the bump:  it has made an appearance.  i think last week’s apple size really put things over the top.  i have been trying to show it off to ben and he agrees that there is something happening there.  so exciting!  pictures to come…

cool & cute things:  baby is growing.  big time.  in the next few weeks, s/he will double in weight and add inches in length.  looks like maternity wear is in the near future for this mama-to-be.  the baby is about 4.5 inches long and weighs in at 3.5 ounces.  baby’s legs are much more developed and the head is much more erect.  baby’s ears and eyes are close to their final position and the patterning of the scalp has begun.

new things:  a can feel little flutters of movement!  it is very cool.  baby has started growing toenails.  and the heart is pumping 25 quarts of blood each day!

meaningful moments:  doing some fun baby store browsing with my hubby.  we wandered and joked and laughed and ooh-ed and aah-ed.  it was so much fun to think about all the cute things in store for our little one.  baby stuff is just so tiny!  i love it.
